Thanksgiving Means Cooking: Time to Clean Your Hood

Posted on November 10, 2015
by Melissa Asplund

The Thanksgiving holiday is all about cooking, eating, and getting together with friends and family. However, studies show that an estimated 14 million people dine out on Thanksgiving. An additional 16 million people order take out to supplement their meals at home.  With this increased surge in food preparation and service, it is critical to rid commercial kitchens of the accumulated grease and oil build up that is the primary cause of kitchen fires.  Kitchen exhaust cleaning, also known as hood cleaning, removes the grease that has accumulated inside ducts, hoods, fans and vents of commercial kitchens.  Therefore, Thanksgiving Time means it’s time to clean your hood!

People choose to dine out as opposed to cooking at home for a number of reasons. According to the National Restaurant Association, 31% of people who dine out do so out of convenience – no cooking or cleaning; 22% are traveling and can’t cook their own meal; 15% prefer the restaurant atmosphere of dining out; another 15% say it is their dining companions’ preference; 12% don’t have space to host; and 5% dine out just because.

Regardless the reasoning behind dining out, food establishments need to ensure that their kitchens are safe and ready to deal with the increased food orders. Restaurants should already have a routine maintenance hood cleaning service in place according to the International Kitchen Exhaust Cleaning Association (IKECA) standards below:

IKECA standard: Table 11.3 Schedule of Inspection for Grease Buildup – Type or Volume of Cooking Frequency

  • Systems serving solid fuel cooking operations – Monthly
  • Systems serving high-volume cooking operations, such as 24-hour cooking, charbroiling, or wok cooking – Quarterly
  • Systems serving moderate-volume cooking operations – Semiannually
  • Systems serving low-volume cooking operations, such as churches, day camps, seasonal businesses, or senior centers – Annually

Unfortunately, time gets away from us and many restaurants do not comply with the recommended safety inspections set forth above for hood cleaning.  That is why the holiday season is the ideal time to ensure that the kitchen hoods are inspected and cleaned properly.

Airtek Indoor Air Solutions has experienced professionals equipped to ensure that the kitchen exhaust systems are cleaned thoroughly.  It is essential to ensure that the fumes, oil deposits, and grease that come from food preparation are removed from the hoods to avoid the highly flammable build up upon the interior lining.

Airtek’s process of scraping clean and then washing the hoods with food-safe caustic chemicals and hot water pressure-washing, ensures that the grease and oil build-up is removed completely.

During this demanding time where 14 million people dine out, it is prudent to ensure that your kitchen is safe and is prepared to handle the excess orders.  Airtek Indoor Air Solutions is certified by both the National Air Duct Cleaning Association (NADCA) and the International Kitchen Exhaust Cleaning Association (IKECA), and is available to provide your business with a free quote for maintaining your hood vent system in a professional, safe manner. Call Airtek at 1-877-858-6213 for more information.
